Broccoli & Goat Cheese Soup

2 tablespoon Olive Oil 1 Large Onion, chopped 1 Russet Potato, peeled and chopped into bite-size pieces 1 Quart Vegetable Stock 2 Heads of Broccoli, chopped 2 ounces Soft Goat Cheese, broken into pieces Salt and Pepper In a large pan, heat oil over medium-low heat and add onion. Cook for about 5-7 minutes or until softened. Season with salt and pepper, add potato and toss to coat. Add vegetable stock and raise heat to bring to a simmer. Turn heat to low, cover and let simmer for 15 minutes or until potato is tender. Stir in broccoli pieces and bring back to a simmer for another 7 minutes. While still hot, transfer about 2/3 of the soup to a food processor or blender, add goat cheese, and blend until smooth. Stir back into the soup until well combined. Season again with salt and lots of black pepper. Music By incompetech.com
